Quick and Easy Healthy Snacks

I love cooking, but sometimes you need a snack and you need it fast. Here are some of my go-to’s for when I just can’t wait until dinner!

Chickpea Peanut Butter Cookies
These babies are only four ingredients, all of which I have on hand at all times: baking soda, chickpeas, nut butter, and honey. Toss everything in a nutribullet for a few minutes, spoon onto a pan, and bake! I also like to add vanilla extract and sea salt. When your sweet tooth is going wild, this a great, healthy option!
Total time: 30min.

Roasted Chickpeas
Are you sensing a theme? Yes, I love chickpeas and I use them in as many things as possible. For those of you who prefer a savory treat, these are a great option (but be warned! they won’t last long!).
Total time: 1hr.

Berries and Cream
While the berries are the healthy part of this recipe, the cream is a great addition when used in moderation. It’s easy to make and lasts in the fridge for days, so you can have it whenever you want! (Side note: fat free cool whip also does the trick, and cuts prep time to about 30 seconds total.)
Total time: 10min.

Apples, Peanut Butter, and Chocolate
Literally chop up an apple, drizzle it with your favorite nut butter, and sprinkle a few chocolate chips or cacao nibs on top. BAM. Dessert.
Total time: 5min.

Biggest Loser Ice Cream Sandwiches
I like to keep these on hand during those hot summer months when all I want is a cold treat after running around in the blazing heat all day. They’re also great for when friends drop by and want something to nibble on.
Total prep time: 10min.
Total (freeze) time: 2hrs.

No Bake Energy Bites
This is a great throw-everything-in-a-bowl-mix-and-done recipe. While the recipe suggests popping the dough in the fridge for a few minutes before forming the balls, I’ve found that it’s not always necessary depending on what ingredients you wind up using!
Total time: 20min.

Parmesan Wonton Crackers
These are a great alternative to processed box crackers and involve minimal effort. I like to make a really huge batch on Sundays so that they last the majority of the week, but you can also just make a few in the moment!
Total time: 20-60min, depending on how many you make
